Traditional Cres cuisine is based on ingredients that could be grown on the island’s sparse soil or caught in the sea. On the one hand, it is “poor” and limited, but on the other hand, it is extremely imaginative and resourceful, transforming simple ingredients into culinary wonders.
The need for modern man to return to original, traditional diet brings us back to some useful principles: sustainability, seasonality, local origin, frugality. Through the food our ancestors ate, we can reconnect with the landscape that surrounds us, but also offer authenticity to those who seek it.
In this story about traditional Cres cuisine, we will present some foods and recipes that should be seen again on our tables – as well as some that will not be at all appealing to modern gastro-explorers.
